This is my adaption on Glen and Friends Cooking’s Ting Recipe (https://youtu.be/xJc_q1ZNv48).
I use white grapefruit as they are a little sweeter (meaning we need less sugar) and look more like ting.
Because of the sugar content and citric acid from the lemons this should keep for a good few months (that won’t be a problem because it is so delicious ;-) )
Ingredients
2 White grapefruit
3 Lemons
250 grams of sugar
500 ml of water
Method
Zest one of the grapefruit into a heatproof container or pan
Juice both grapefruit and all the lemons into the heat proof container
Add the sugar to the heatproof container
Pour over 500ml of boiling water (or add the water and bring to the boil and then take off the heat)
Stir until all the sugar has dissolved
Leave to cool
Pour into your bottle and seal
Serving
Fill a glass 1 quarter full with the syrup and top up with chilled soda water.
Enjoy
Equipment
1 pan
A juicer big enough for grapefruit (https://amzn.to/2YPEIfb I use this one)
A clean sterile bottle (I used a thorougly cleaned and sterilised screw top wine bottle)
